Paleo Pumpkin Chocolate Chip Muffins
I confess to being a pumpkin-flavored-everything LOVER!
I actually have no shame about this at all! And neither should you! And there's something extra delicious about pumpkin + chocolate! Am I right?!
I don't follow a Paleo diet, but I do enjoy Paleo desserts because they don't use traditional, processed white flour. Almond flour and coconut flour are the only ones I try to eat!
So without further ado, here is one of my favorite pumpkin treats you can enjoy for breakfast, as a mid-day snack, or as a dessert!

Paleo Pumpkin Chocolate Chip Muffins
Ingredients:
- 2 cups almond flour
- 1/4 cup coconut flour
- 1 tsp baking soda
- 1 tsp cinnamon
- 2 tsp pumpkin pie spice
- 1/2 tsp salt
- 1 cup organic pure pumpkin puree (unsweetened, not pie mix)
- 2 large eggs
- 1/2 cup maple syrup
- 1/4 cup melted coconut oil
- 1 teaspoon vanilla extract
- 1/2 cup mini chocolate chips
Directions:
- Preheat oven to 350° and grease a mini muffin tin with a tiny bit of coconut oil.
- In a large bowl, mix the pumpkin, eggs, maple syrup, coconut oil, and vanilla.
- In a separate bowl, combine the almond flour, coconut flour, baking soda, cinnamon, pumpkin spice, and salt.
- Add the dry ingredients to the wet and stir until completely mixed and no dry spots remain.
- Fold in the chocolate chips.
- Scoop into muffin tin, making sure each one is as even as possible.
- Bake for 8-12 minutes (depending on your oven), until a toothpick inserted in the center comes out clean.
- Store in the fridge if not eaten within 24 hours.
