Paleo Pumpkin Chocolate Chip Muffins

I confess to being a pumpkin-flavored-everything LOVER!

I actually have no shame about this at all! And neither should you! And there's something extra delicious about pumpkin + chocolate! Am I right?!

I don't follow a Paleo diet, but I do enjoy Paleo desserts because they don't use traditional, processed white flour. Almond flour and coconut flour are the only ones I try to eat!

So without further ado, here is one of my favorite pumpkin treats you can enjoy for breakfast, as a mid-day snack, or as a dessert!

  4. Add the dry ingredients to the wet and stir until completely mixed and no dry spots remain.
  5. Fold in the chocolate chips.
  6. Scoop into muffin tin, making sure each one is as even as possible.
  7. Bake for 8-12 minutes (depending on your oven), until a toothpick inserted in the center comes out clean.
  8. Store in the fridge if not eaten within 24 hours.
