What I ate: Meatless March, Week 1
I can hardly contain my excitement!
- It's March.
- We sprang ahead.
- The sun is shining.
- AND:
He, he. Isn't that the truth?!
March is always the month I kick my health and fitness practices into HIGH gear.
With 2015 being THE year I WILL hit my goal weight (I am determined), I wanted to do something super exciting to keep things fresh.
Sean and I have always felt our best when we've adhered to a predominately plant-based diet. In the past, we have gone vegan, or what we call flexitarian, numerous times. We spent years eating meat only twice a week (usually on the weekends) and never felt better.
I'll admit that I've gotten lazy. {Hey, it takes some dedication to press tofu to the perfect consistency.} But when Sean asked to go vegetarian for a month, I couldn't resist! Talk about a proud wife moment!
So here are our first 6 meals (we ate out on Saturday. Don't worry, we stuck with vegetarian Thai options!).
S: Cauliflower Crust Pizza with Pesto, Roasted Tomatoes, and Arugula
M: Thai Tofu Wraps with Spicy Peanut Dressing
T: Tofu Burrito Bowls
W: Pasta Bar with Brown Rice Noodles, Zucchini Noodles, Pesto, and Vodka Sauce
TH: Coconut Lime Butternut Squash Soup
F: Tempeh Bulgogi with Kimchi
I'll work on getting the remaining recipes posted soon.
I have some fabulous meatless entrees planned for this week and can't wait to share them with you.
