Pesto, Tomato, and Spinach Stuffed Chicken
Ladies, this is NOT just another boring chicken recipe!
I'm going to say this with complete confidence: pesto makes anything delicious! Do you agree?!
And when you smother chicken in the green goodness, magic happens. Throw in some tomatoes, spinach, and cheese...and bang, a flavor explosion happens inside your mouth!
I like to serve this with either whole wheat couscous (pictured), whole wheat pasta (bow ties are always a great choice), or garlic mashed cauliflower.
Oh and be sure to scrape out the melted, caramelized cheese and pesto from the bottom of the pan and devour it...it's the real winner here! I hope you love it as much as we do!

Pesto, Tomato, and Spinach Stuffed Chicken
Ingredients:
- 4 chicken breasts
- 1/2 cup of pesto
- 1 cup of sliced cherry tomatoes
- 1 cup grated mozzarella cheese
- 1 cup of fresh spinach
- 2 tablespoons of olive oil
- salt and pepper
Directions:
- Preheat oven to 400 degrees.
- Slice the chicken breasts horizontally without going all the way through and spread open.
- Spread the opened surface of the chicken with all the pesto.
- Add the sliced tomatoes to one side of the opened chicken.
- Sprinkle that side with half of the grated mozzarella cheese.
- Top the same side with several spinach leaves.
- Heat 1 tablespoon of olive oil in an oven proof skillet over medium high heat.
- Fold the chicken together being careful not to lose all the stuffing.
- Sear the chicken on both sides for about 3-4 minutes a side.
- Finish baking in the oven for 8-10 minutes then sprinkle a little extra cheese on top as soon as you remove it.
- Enjoy!
